Red wine Made with black grapes, which are fermented with their skins to extract the colour. These are its characteristics: - The young red tends to be dark cherry in colour due to the long fermentation of the skin. Its aroma is fresh, intense and fruity due to its youth. In the mouth it is persistent, well balanced with a body between light and medium. It is a flavoursome and aromatic wine, which brings to mind red fruit and mature grapes. The tannin (the characteristic astringent compound of every wine) is sweet. - The vintage red is of an intense cherry red in colour with orange tones. Its aroma brings to mind mature black fruit or new wood. Its flavour is fruity at first and its body is medium. The tannin is subtle but marked and well balanced due to the maturity of the grapes. It also has a tasty and fruity aftertaste.
White wine Made with white grapes or colourless pulp and must fermented without the skins. These are the different varieties: - A young white wine tends to be straw yellow or bright green in colour due to its acidity. Its aroma brings to mind fruits of the season, flowers, spices and dried fruits. On the palate the sensations are acidic, fresh and light. - Vintage white has a darker colour as it ages, and the more acidic it is the brighter its colour. It is a wine with a delicate hint of vegetables and cereals, with a woody flavour. It has a slightly bitter finish.
Ros� wine Made with black grapes. Its must is fermented with the skins for a set amount of time. It is a wine with characteristics that fall between those of red and white wine. Its flavour is fruity and fresh and its colour is an attractive dark pink.
