The Ochoa family in te kingdom of Navarra The surname Ochoa has been linked to wine since the 14th century, according to a document dating from 1370. It was signed by Queen Juana, firstborn of the King of France and the Queen of Navarra. These days Javier Ochoa is in charge of investigating and creating the different varieties of wine that emerge from this corner of Spain at the foot of the Pyrenees mountains. Bodegas Ochoa carry out their winemaking carefully and all of their wines are estate-bottled.
Grapes from Olite The vineyards spread over 143 hectares of land. Most of the vines are on an estate called El Bosque in the town of Traibuenas, while the old vines grow at the new vineyard in Olite.
At harvest time, the small Moscatel grape is the first to arrive at the vineyard. Days late come the Merlot and Tempranillo grapes, then the Garnacha, Graciano and Cabernet-Sauvignon.
The different varieties Young wines - Garnacha and Tempranillo red: a wine with an intense aroma, bright, balanced color and with a good structure. Should be served at 18� C. Ideal for meat, fishes in sauce, cold cuts and cheese. - Garnacha ros�: With an intense raspberry color, fruity bouqet, good structure in the mouth, tasty, broad and balanced. it is best to drink it chilled -at around 8�C-, with pasta, saladads and vegetables. - Viura and Chardonnay white: Pale, straw-yellow in color, brillant, fresh and harmonious. Also served chilled -at 8�C-, with grilled fish and pasta.
Special wines - Graciano Garnacha: A fruity wine, harmonious, fresh and pleasant. Should be served at 14�C. Goes well with grilled meat, stews and aged cheeses. - Rosado de l�grima: Made with the traditional �sangrado� technique, in which the grape juice is extracted after a short soaking, taking on this color. Best served chilled at 8�C.
Crianzas - Tempranillo: Clear, intense aroma and long, balanced flavor. Served between 16 and 18�C, with grilled meats, stews and aged cheeses. - Cabernet Sauvignon: Fruity, strong and long. Served between 18 and 20� C. Perfect for serving with grilled meats, duck, pork, veal, stews and cheese. - Merlot: Mild, elegant bouquet, aromatic and flavorful. Served between 18 and 20� C, with grilled meats, game, stew and Cabrales cheese.
Reservas - Ochoa Reserva: Fruity, balsamic, well structured, with a long and elegant finish. Served between 18 and 20� C. Ideal for grilled meat, stew and aged cheeses. - Gran Reserva: A wine that is potent int the nose, with a bouquet reminiscent of berries, tasty and strong. Should be drunk between 18 and 20� C, and goes well with grilled meat, duck, pork, veal, stew and aged cheese.
Designer wines - Vendimia seleccionada: Wine made with the best Merlot and Cabernet-Sauvignon grapes from Finca Montijo. Served between 18 and 20� C, with roasts and red meat. - Moscatel sweet wine: Sweet wine that stands out for its aroma and balance. It is ideal with appetizers and desserts with fruit and Cabrales cheese.
